The Place de la Concorde feels like the center of Paris.  (But no claims of geographical accuracy here.)  Standing in one spot, you can take in a view of the Tuileries and the Louvre, a view of the Champs-Élysées reaching all the way to the Arc de Triomphe and the Grande Arche de la Défense beyond, plus the Eiffel Tower off to the side.  Just be sure to keep your wits about you while crossing the six or so lanes of chaotic traffic.
